A Spin on Coffee Cake

Have you seen this recipe yet?  If not, be sure to try it!  It's not really coffee cake, but cake you make in a coffee cup/mug.   This is an excellent recipe for little kids to do with you - especially if you are in the Easy Bake Oven generation - this is WAY BETTER!   Use your microwave instead of cooking with a light bulb!

5-Minute Chocolate Mug Cake

1 Coffee Mug
4 T. Flour
4 T. Sugar
2 T. Baking Cocoa
1 Egg
3 T. Milk
3 T. Oil
3 T. chocolate chips (optional)
Sprinkle of nuts (optional)
Small splash of Vanilla
Frosting (optional)


Directions: 
Add dry ingredients to mug and mix well.  Add egg and mix thoroughly.  Pour in the milk and oil and stir. Add the chocolate chips (if using) and vanilla.  Mix well.

Put your mug in the microwave and cook for 3 minutes on high.  The cake will rise over the top of the mug, but don't be alarmed!  Allow to cool a little and then tip out on a plate.  Frost if desired.

EAT!  This can serve 2 if you wish to share.



You can also do this with boxed cake mixes. You'll have to experiment.   Use about 1/3 c.- 1/2 c. of your cake mix (any flavor).  Add 3 T. water and 3 T. oil, plus an egg white.  If you're making more for multiple kids or adults, mix up the entire box of batter.  You can store the unused batter in the fridge for a few days - but not too long!

There are also microwave cupcake molds you can buy for microwave baking.  I have one. The cups are shaped like little hearts.   Awww.
